How to Use Annam Idli Rice for Idli & Dosa Batter
This rice is the primary ingredient for creating the batter from scratch:
- Soaking: Typically, you would soak the Annam Idli Rice and Urad Dal separately for at least 4-6 hours. A common ratio is 4 parts Idli Rice to 1 part Urad Dal. A teaspoon of fenugreek (methi) seeds is often soaked with the dal.
- Grinding: Grind the soaked dal and rice separately into smooth batters using a wet grinder or a high-powered blender, adding water as needed. The dal batter should be very fluffy, and the rice batter can be slightly granular.
- Combining & Fermenting: Mix the two batters together with your hands, adding salt. The warmth from your hands can help initiate fermentation. Cover the batter and leave it in a warm place to ferment for 8-12 hours, or overnight, until it has doubled in volume and is bubbly.
- Making Idlis: Gently stir the fermented batter. Pour into greased idli molds and steam for 10-15 minutes.
- Making Dosas: You can often use the same batter (sometimes thinned with a little water) to make crispy dosas on a hot tawa.
