Ingredients You'll Need:

For the Koftas (Meatballs):

  • 500g minced meat (lamb, mutton, or beef)
  • 1 medium onion, finely chopped
  • 2 tbsp gram flour (besan)
  • 1 tbsp ginger-garlic paste
  • 1 green chilli, finely chopped
  • A handful of fresh coriander, chopped
  • 1/2 packet of Shan Kofta Masala (or use 1 tsp garam masala, 1/2 tsp cumin powder, 1/2 tsp coriander powder, salt to taste)
  • Oil for frying

For the Curry (Gravy):

Step-by-Step Instructions:

  1. Make the Koftas: In a large bowl, combine the minced meat, chopped onion, gram flour, ginger-garlic paste, green chilli, fresh coriander, and your kofta spices. Mix very well (using your hands is best!) until everything is thoroughly combined. Form into small, round balls, about the size of a golf ball.
  2. Fry the Koftas: Heat oil in a pan over medium-high heat. Carefully fry the koftas in batches until they are browned on all sides. They don't need to be fully cooked through at this stage. Remove and set aside.
  3. Start the Gravy: In the same pan, add a little more ghee or oil if needed. Sauté the onion purée until it turns golden brown. Add the ginger-garlic paste and cook for another minute until fragrant.
  4. Build the Flavor: Add the tomato purée and the remaining spices (Shan Kofta Masala and turmeric). Cook, stirring, until the oil begins to separate from the masala.
  5. Finish the Gravy: Lower the heat and slowly stir in the whisked yogurt. Once combined, add about 1-2 cups of water or broth to create a gravy. Bring to a gentle simmer.
  6. Combine & Simmer: Carefully add the fried koftas to the simmering gravy. Cover the pan and let it cook on low heat for 15-20 minutes, allowing the koftas to cook through and absorb the flavors of the gravy.
  7. Garnish & Serve: Garnish with fresh coriander. Serve hot with naan or basmati rice.
